New Menu

I’m working on a new month-long menu since the one that dear, sweet Amelia made for me 1-1/2 years ago was based on a different inventory of meat available in our freezer (for example, we had our pigs processed into more pork chops then). I realized again how much I LOVE Fix-It and Forget-It Lightly. Amelia’s menu was crock pot-based and it really worked so well for us that I wanted to use mostly crock pot recipes again. Last night, for example, we had a mandarin orange chicken dish that utilized inexpensive thighs and drumsticks. Everyone seemed to really like.

Since I follow the South Beach Diet guidelines, I didn’t eat that particular recipe, but I am satisfied when everyone else enjoys the meal!
